At 3 Bears Farm in Pennsylvania, we grow certified organic garlic scapes — the tender, curly green shoots that emerge from hardneck garlic bulbs each spring. Our scapes are harvested fresh with no synthetic pesticides or herbicides, certified by Pennsylvania Certified Organic (PCO).
Organic garlic scapes are available for a short window each year, typically late May through early June. Harvesting them early encourages the plants to put their energy into bigger, bolder garlic bulbs. Use them fresh in pestos, sautés, quiches, stir-fries, or grill them as a delicious seasonal treat.
